Since spring is on its way fruit is back in season. Making smoothies is a great way to kill some time and brighten a bad mood. The cheerful colors of fruits and the smoothies they make add some eye candy on the days where spring showers are making everything gray. This recipe makes three servings so it’s easy to share or refrigerate for later. To make this incredibly sweet pineapple twist smoothie you will need the following:
5 cups of frozen pineapple
3/ 4 cup coconut milk
1/ 4 cup sweetened condensed milk
1 tsp of vanilla extract
3-4 ice cubes (optional for additional frostiness)
Pineapple slices for garnish
Maraschino cherries for garnish
Blend the frozen pineapple, coconut milk, ice cubes, and sweetened condensed milk together in a blender. Add the vanilla extract and blend for a little while longer to make sure everything is combined. Normally you would then pour the smoothie into glasses and serve, but there is another way to serve this smoothie that will make you feel like a fancy drinkmaster.
Place the mixture into a ziplock bag and snip off a corner with scissors. Gently squeeze the smoothie in a circular motion into a fancier glass. Take the pineapple slices and cut a little groove into them. This allows them to rest on the rim of a glass. You can also garnish the glasses with the maraschino cherries.
This smoothie is very sweet and pineapple-ey. The vanilla flavor goes great with the taste of the condensed milk and pineapple. However, the sweetness can get overwhelming and it’s highly recommended to share with friends. This is also a highly customizable recipe, with different fruit combinations possible. However, due to the naturally acidic and strong flavor of pineapple, a similar fruit with heavy citrus flavors should be used to prevent this smoothie from being too sweet. Other fruit that could produce similar results would be oranges, tangerines, limes, and even lemons. All in all, this is a perfect smoothie to welcome spring.
